Once you've done all your prep work (mashed potatoes, sautéed veggies, etc) you will spread a decent layer of mashed sweet potatoes on your tortilla. Next, sprinkle it all with some feta cheese. Then spoon your sautéed veggies onto one half of the tortilla and carefully fold in half. I pressed mine down a bit to make sure that nothing fell out!
Warm up your sauté pan with a little butter on medium/low heat. Brown each side of your quesadilla for about 2-3 minutes. (I turned up the heat on mine at the end to make it a little crispy.)
Serve and enjoy with your favorite salsa! I also recommend eating this with a cucumber greek yogurt sauce! So. Good.
