I'm having some dear friends over tonight for fresh summer rolls and red curry. I'll be revisiting this delicious recipe that I found on A Beautiful Mess. I did make a few modifications to fit my needs: 1) I added extra red curry paste -- 3 tbsp. 2) LOTS of veggies (because I didn't include any meat or tofu: Onions, peppers, mushrooms, bamboo shoots, carrots, zucchini, & broccoli 3) I mixed in the coconut milk while the veggies were halfway cooked, so that they got some of the coconut flavor, as well.
