Modifications: The original recipe calls for fresh rosemary, which I didn't have, so I used fresh basil. The basil was really great! I also added some extra pieces of potatoes and sliced onions to the base of the pan to add a little extra sumpin' sumpin'.
Suggestions: The original post (link below) suggests using a wooden skewer to help when you're cutting the potatoes 3/4 of the way through. I didn't have a skewer, so I just had to be extra careful. I did mess up once and sliced it all the way through, hence the extra potato pieces! If you have a skewer, use it!
We enjoyed these accordion potatoes with some garlic and herb couscous and sautéed vegetables. It was super yummy!
